Six legendary Australian wineries, each showcasing a vertical selection of their most iconic wines. The Legacy Tasting brings together rare museum releases and celebrated vintages, offering a unique insight into the evolution of some of Australia's finest wines.

This intimate tasting presents 16 exceptional wines across six verticals, allowing guests to explore how terroir, winemaking, and time shape each vintage. From the crisp acidity and aged complexity of Howard Park Museum Release Rieslings to the depth and power of Henschke’s Mt Edelstone Shiraz.

Exploring Vintage Verticals:

A vintage vertical tasting is a rare opportunity to experience the evolution of a wine across multiple vintages, throughout different stages of it’s life. Highlighting the intricate interplay of age, vintage conditions, and winemaking craftsmanship in shaping its identity.

By tasting different years of the same wine side by side, guests can explore how aging transforms structure and flavour, how vintage conditions shape expression, and how the winemaker’s vision unfolds over decades.

From the bright acidity and youthful vibrancy of a newly released wine to the layered complexity and refined elegance of a perfectly aged bottle, a vertical tasting offers a deeper appreciation for the artistry of fine wine.


The Producers & Wines…

  • Howard Park is one of Western Australia’s most revered family-owned wineries, known for producing exceptional Riesling and Cabernet Sauvignon. With vineyards in both Margaret River and Great Southern, Howard Park’s wines reflect the unique terroirs of these two renowned regions.

    Their Museum Release Rieslings showcase the incredible aging potential of Great Southern Riesling, evolving from vibrant citrus and floral notes to complex honeyed and toasty characters over time.

    The winery’s commitment to precision, minimal intervention, and sustainability has solidified its place among Australia’s most esteemed producers.

  • A true pioneer of Western Australian winemaking, Plantagenet was the first commercial winery in the Great Southern, established in 1968. Known for crafting elegant, cool-climate Cabernet Sauvignon, Shiraz, and Riesling, Plantagenet’s wines balance richness and structure with a distinctive freshness.

    Their Museum Cabernet Sauvignons have quickly become favourites for their age-worthiness, developing layers of dark fruit, spice, and earthy complexity over time.

  • Founded by John Glaetzer, one of Australia’s most celebrated winemakers, John’s Blend has been producing bold, cellar-worthy Cabernet Sauvignon since 1974.

    Known for its deep concentration, fine tannin structure, and seamless balance, John’s Blend is a small-batch, single-vineyard expression that embodies the power and generosity of Langhorne Creek. With a winemaking philosophy rooted in tradition and quality, these wines continue to be among the most sought-after boutique Cabernets in Australia.

  • One of Victoria’s most iconic wineries, Bannockburn has been pioneering cool-climate winemaking in Geelong since the 1970s.

    Best known for Shiraz, Pinot Noir, and Chardonnay, Bannockburn’s wines are defined by their elegance, depth, and minerality, reflecting the limestone-rich soils and maritime influence of the region.

  • Tim Adams is one of Clare Valley’s most respected winemakers, renowned for producing powerful yet balanced Shiraz and Riesling.

    His flagship Aberfeldy Shiraz has built a reputation for being one of Clare Valley’s finest, showcasing intense dark fruit, fine tannins, and exceptional longevity. Crafted with minimal intervention and traditional winemaking techniques, Tim Adams wines consistently deliver rich, structured, and expressive examples of Clare Valley terroir.

  • A name synonymous with Australian fine wine, Henschke is one of the country’s most historic and celebrated family-owned wineries, dating back to 1868. While best known for Hill of Grace, the Mt Edelstone Shiraz is an equally revered single-vineyard icon, sourced from over 100-year-old vines in Eden Valley.

    This wine is renowned for its depth, intensity, and remarkable aging potential, evolving from dark fruit and spice to complex, earthy, and perfumed characters over time. Henschke’s commitment to biodynamic viticulture and minimal intervention winemaking ensures that each vintage tells a story of place and time.

Light to medium green-yellow; a beautifully intense wine with lime/citrus/tropical aromas, and a delicate, crisp palate in which passionfruit, lime and mineral flavours intermingle. Quite flawless.

1994 Plantagenet 'Museum' Cabernet Sauvignon
Based on its enormous depth of ripe dark berry/plum fruit, spotless cedar/chocolate oak and muscular tannic extract, this wine has enormous cellaring potential. Its layers of rich fruit and earthy/olive complexity stamp this as a WA red of true class.

The 1999 Cabernet Sauvignon Individual Select No. 26 was aged 33 months in new French and American oak. An evolved Cabernet revealing spice box, cedar, chocolate, fruitcake, black currant, and fruit characteristics, it represents a hypothetical blend of a French Bordeaux and an Australian Cabernet.

2006 John's Blend 'No 28' Cabernet Sauvignon

John’s Blend No. 33 has had 40 months maturation in an equal spilt of new French and American oak hogsheads. Totally opaque black dark crimson red colour with very deep dark red hue. The nose displays lifted aromas of blackcurrant, liquorice, vanillin oak, confectionary and spice. Full bodied the palate is filled with ripe lush fruit and possesses a velvet like mouthfeel. Mouthfilling flavours of blackcurrant and liquorice are followed by some mocha and vanillin spice like characters on the back palate. Velvet smooth tannins with long aftertaste of blackcurrant, dark chocolate, cedar and spice.

Savory and earth-driven, with roasted game meat, earth and olive tapenede. The palate is full-bodied with firmly integrated tannins, showing notes of saltbush, dried herbs and wet earth. Has softened with time; a food wine for sure. Drink or hold. Screw cap.

2021 Bannockburn 'Museum' Shiraz

Made with approximately 20% whole bunch including a portion of carbonic maceration and matured in French hogsheads and puncheons (10% new). A medium-bodied, fragrant and elegant wine that opens up with red and black fruits, floral notes, pink peppercorns and blood orange. On the palate, this has real grip, intensity and persistence, and this will totally reward those who still have some in their cellar a decade from now.

Youthful purple-red; fresh, scented cherry/berry/spice aromas, reflecting a relatively cool vintage but showing lovely varietal character. There is delicious spicy/cherry/berry fruit on the palate with sweet vanillin oak. A luscious wine with everything going for it.

2013 Henschke 'Mt Edelstone' Shiraz
Made from 101-year-old Eden Valley Shiraz vines, and coming from a biodynamically and organically farmed block this is a phenomenal vintage of Mount Edelstone... Henschke decided to release the 2012 and then the 2014 and then they went back to 2013 because it is blockier and more concentrated than the other two vintages. Heroic and with epic tannins this wine is an instant classic and it has tracked the style of the 2013 vintage perfectly. The nose is sensational with layers and layers of black fruit and liquorice spice. Serious and incredibly long and heroic I am hard pressed to think of a more exciting and imposing Mount Edelstone.
