Always a surprise to try a variety not generally associated with a region, but this is fabulous. Expect poached pears and ginger powder, lemon peel and glace lime, yet lots of savoury tones with an almost velvety texture. There are no hard edges with a mere 10g/L of RS in perfect balance with the fine acidity. It lingers long, as long as the queue at Berghain, Berlin’s most famous techno club. According to the LS Merchant folk, the fruit comes from the loudest Wilyabrup vineyard you’ve never heard of, Maximaler Rave. Too good not to share.
