2021 Corymbia Cabernet Sauvignon

I only looked at this 2021 Cabernet Sauvignon a little while ago, but it's better for spending six or so further months in glass. It's settled into itself. This kind of Cabernet really gets me going. It is spicy, detailed, dusty, rocky and of the earth. It's mineral and dark without being heavy. It's like a cool winter night, without wind or rain, in the bush. There are notes of eucalypt, ferruginous tannin, sage and samphire. It's a stunningly beautiful wine, one of place and poise. In the lineup, this is the one that really gets me excited. A bit tittery, it's good.

You'd buy this for its oomph alone but really, it's the structure and the delicious array of complex flavours that really draws you in. Lashings of tobacco and bacon fat-like characters mingle with blackcurrant, clove and something sweeter, like pureed strawberries. Dry, fine-grained tannin cuts a dry swathe through the finish, setting it up for a long cellaring future.

It’s a graceful style of Cabernet, fine boned and fresh. Blackberry, strawberry, redcurrant, potpourri, slight smoky bacon bone character, and a sea spray/brine kind of thing. Tannin is tight with an emery board texture, subtle tobacco/leafy perfume, and a cool red fruited finish of excellent length, those high quality tannins really stretching it out. Subtle. Lovely
