The Menu & Wine List

1st Course
Great Southern Riesling 2024 (New Release),
Our Price $24
Single Vineyard Mount Barker Riesling 2024 (New Release), Our Price $31
The colour is light and pristine, and the aromatics display powerful pithy lime and lemon with enticing notes of citrus blossom. The palate is characterised by the powerful acidic drive of the wine. Dry and elegant, the wine showcases flavours of intense lime juice and zest, with notes of lemon blossom and river stone minerality (which will develop further with bottle age). The wine has a clean, refreshing finish, with a lingering lemony acidity.
Winery Notes
'The Pamela' Porongurup Riesling 2023, Our Price $41
This has developed very quickly into an outstanding Great Southern riesling. It comes from the Misery Hill vineyard in the Porongurup. Combines riesling intensity and tension into a bracing linear style. Aromas of spice and lemony lime zest with a little minerality. It was a very good season, and this is a marvellous example of the year. Outstanding.

Tempura asparagus, miso and orange mayo

2nd Course
Great Southern Vermentino 2024 (Pre- Release),
Our Price $40
Great Southern Fiano 2023, Our Price $26
93 Points, Wine Showcase Magazine
Light straw colour. White nectarine and gardenia aromatic. Medium in weight with a creamy texture that glides along with style and grace. Stone fruit and marzipan notes are well carried by soft acidity into a long and supple finish
92 Points Stuart Knox, The Real Review
Single Vineyard Porongurup Fumé Blanc 2023, Our Price $32
A wonderful example of the fume style. Doesn’t fall into the trap of overdoing the oak use, resulting in a wine that is perfectly balanced and seamlessly structured. The oak sits comfortably within the fruit. Nice touch of lemon meringue with a dollop of cream on the palate. A keen acidity sustains a long finish. First-rate example of this distinctive style.
95 Points Ray Jordan, rayjordanwine.com

Salmon carpaccio, dill, rye crumb

Great Southern Chardonnay 2023 (New Release), Our Price $29
95 Points, Wine Showcase Magazine
This wine has bright aromas of lemon curd and peach. The palate displays a modern styled chardonnay of citrus zest and stone fruit with the use of new oak providing subtle spice characters. The wine is bright and mouth filling with a long lingering finish.
Family Reserve Chardonnay 2023 (New Release), Our Price $52
rom the Denmark sub-region, this is all class. The fruit was whole bunch pressed for fermentation in French oak, one third new. Lees stirring for six months while in that oak. A shining pale lemon. Fragrant with notes of citrus, stonefruit, grapefruit and a gentle oak influence with cinnamon and nutmeg plus hints of flint. A complete and complex style with touches of white peaches and figs. Seamless, beautifully structured with great length, this will provide immense pleasure over the next six to ten years.
96 Points Ken Gargett, Winepilot
‘The Vivienne’ Denmark Chardonnay 2020, Our Price $95
98 Points, Equal Top in Category, Winestate Chardonnay Tasting, Dec 2022
Top of Chardonnay Class, The Real Review 2024

Bold and buttery, this is as full as you can get on the nose, which is also perfumed and intense, with notes of tuberose, jasmine, red gum honey, sandalwood and spice. Generous and modern in style, showing expensive oak, exuberant gun flint, a touch of spice, powerful and warm fruit, while a fine mineral splay drives tension. Funky yet prestigious and classy, it's akin to a Vivienne Westwood creation – punk couture with layers of softness laced over a bracing structure. The palate is sublime, with stone fruit, marzipan, amaretti, rose hip, raspberry, dried floral notes and an ever-so-fine fringing of umami charred toast. It's a statement wine, yet it’s far from style over substance but one of consideration and effort. Whole bunch, new and seasonal barriques, full solids, wild ferment, full malolactic. Matured on lees with no sulphur for five months, followed by 10 months oak ageing and finishing in tank.
97 Points Cassandra Charlick, Decanter

Abrolhos half shell scallops, sambal butter

4th Course
Single Vineyard Frankland River Grenache 2023(New Release),
Our Price $36
Ray Jordan’s Top 100 Reds 2024
This has fast become one of my favourite grenaches from anywhere in Australia. It comes off the Riversdale vineyard in Frankland, so its pedigree is impeccable. Perfumed red berry aromas with a little rose petal and earthy spicy nuances. Brilliant and bright medium bodied palate delivers succulent fruit with balancing savoury notes. The tannins and light oak treatment combine to focus a very long finish.
95 Points Ray Jordan, rayjordanwine.com
Single Vineyard Frankland River Clèment V 2023, Our Price $33
The engaging, new-wave 2023 Clément V Single Vineyard Frankland River is seductive with its layers. of fleshy blackberry aromas lifted by gamey, spicy complexity with fine oak in support. There is an impressive level of sophistication with firm, chewy tannins driving a long, winding finish. The 2023 is impressive and will get better.
94 Points Angus Hughson, Vinous.com
Single Vineyard Frankland River Shiraz 2023(New Release), Our Price $37
96 Points, 'Best of the Best' - Winner Ray Jordan's Top 100 Reds 2024
This is all primary fruit from the outset before some spice enters the picture. Lashings of red plum, blueberry, dark cherry, and black currant are nicely balanced by cinnamon, nutmeg and mocha. The palate is equally primary fruit driven, with notes akin to the nose but a higher level of mocha bitterness bringing further interest and dimension. The tannins are mocha-laced, too, with a chalky feel adding frame through the finish. A vibrant, flavoursome Shiraz in its youth.
93 Points Tom Kline, Winepilot

Pork and fennel seed sausages, crushed pea, mustard oil

5th Course
Great Southern Cabernet Sauvignon Merlot 2022,
Our Price $24
93 Points, Wine Showcase Magazine
Inky core to a deep ruby red. Fragrant with plums, violets and cinnamon spices. Dark fruit on entry and it stays plush and well fruited to the end. Hits of bay leaf and slate add character while dusty tannins bring focus and dry the finish well. Very good value here
90 Points Stuart Knox, The Real Review
Single Vineyard Frankland River Cabernet Sauvignon 2022, Our Price $37
95 Points, Wine Showcase Magazine
A very pretty wine that opens with a floral red berry combination on the nose underpinned by pure varietal blackcurrant. Comes off the excellent Riversdale vineyard and it’s medium bodied elegance reflects both the vineyard and the season. The palate is still quite tight but there is ample fleshy fruit. A slightly ironstone ferruginous character edges in while the oak is neatly balanced. A poised and expressive wine.
94 Points Ray Jordan, rayjordanwine.com
The Philip Adrian Frankland River Cabernet Sauvignon 2020, Our Price $95
The driest winter and spring for 100 years reduced yields by 50–60%. From the mature Riversdale vineyard: cold soaked for two days, then four weeks on skins; matured in French barriques (40% new) for 15 months. It's resoundingly rich and luscious, the colour splendidly deep, cedar and cigar box threaded through the ripe cassis fruit. Who knows how long this wine will live?
97 Points James Halliday, Halliday Wine Companion

Seared sirloin, saffron braised tomatoes, leafy greens

Tea, coffee, and biscotti

About Singlefile

Singlefile Wines was co-founded in 2007 by geologists Phil and Viv Snowden, along with their daughter Pam and son-in-law Patrick Corbett. They all had successful careers prior to the establishment of Singlefile, but their pathways became inextricably woven together thanks to their shared love of wine. Patrick and Pam lived in Italy as a young couple, which crystallised their appreciation for exceptional wines. Reuniting with Phil and Viv over summer holidays gave the family an opportunity to discover Old World wine regions together, planting the seed for creating their own winery.

When Phil and Viv sold their successful consultancy, Snowden Mining, in 2004 they went in search of their next venture. Together with Patrick and Pam, they dug deep to learn more about the principal wine regions of Australia, with a goal to uncover the best site for producing outstanding cool-climate wines. Their search took them to Denmark in Western Australia, where they discovered their piece of paradise. Drawing on their unrivalled geological experience, Phil and Viv selected an established vineyard they felt promised the ultimate expression of Denmark’s terroir. This property, where the cellar door is now located, became the home of Singlefile and the foundation of its acclaimed Chardonnay wines.

After building the Cellar Door, Patrick and Pam moved their family to the east coast of Australia for a year to build the distribution, working with sommeliers, trade partners and consumers to grow awareness of Singlefile. Phil and Viv worked on refining their viticultural practices and growing the cellar door presence to invite people into their winery home.

Today Patrick plays a vital role in the production of all Singlefile wines. Pam administers the day-to-day business operations. Phil and Viv live on the Denmark property, keeping a keen eye on the vineyards along with the Cellar Door.
Quality always comes first, and this outcome has been achieved by a minimal intervention approach in both the vineyard and the winery. Singlefile wines are made as naturally as possible, allowing the nuances of the environment to shine through in the final product.
Singlefile is proud to be widely recognised as one of the finest wineries in the Great Southern region. What drives the entire Singlefile family is the desire to craft wines at the top of their game, manifested in the Latin motto on Singlefile’s crest, Semper Superne Nitens – “the pursuit of excellence”.

The Great Southern:
Singlefile’s dedication to making exceptional wines is paralleled by its commitment to the Great Southern region. It’s as large as it is diverse. Its geography is a patchwork of coastal maritime land, gently undulating hills, open grazing country, eucalypt forests and granite outcrops. A true liquorice all-sorts of land girt by sea. And this variety is what makes the Great Southern so convincing as a supreme winemaking region.
