Bright, pale Lemon. A complex nose showing a blend of feijoa, guava and grapefruit. The palate opens rich and supple, with a fine acid line keeping the palate bright and fresh, subtle flint throughout. The balance between residual sugar and acid is on point. Diletti Riesling 2023 (New Release), Our Price $39
A&W Riesling 2023, Our Price $41
The 2023 A & W Riesling is named in honor of winery founders, Angelo and Wendy Diletti. It is the product of the lovely 2023 season, which was mild and even. The wine at this early stage is gently textured and fine yet with a powerful flow of flavor across the palate. The wine has a coiled aspect to it and feels very much like it will be ready to spring into action in the future. The Castle Rock Rieslings made by Rob Diletti offer us ample opportunity to drink now and/or cellar, and all of the wines offer incredible value for money. It may not always be this way, but for now, the almost invisible hand of Diletti in these wines is admirable. They are classy to the nth degree.

Torbay asparagus, sambal butter
3rd Course
Sauvignon Blanc 2023, Our Price $23
The palate is clean and bright, with prominent citrus and tart tropical flavours. The inclusion of barrel ferment adds a subtle foil of complexity to balance the fruit weight. There is a seamless nature to the wine from the front to the back of the palate, with all components in perfect harmony. A crisp acid back bone gives the wine great balance, structure and a clean, long finish.

Gruner Veltliner 2024 (New Release), Our Price $33
Diletti Chardonnay 2021, Our Price $35
This wine is supple and well weighted. The stone fruit and mealy texture framed by French oak cedar and toast notes create an elegant richness to the mid-palate. Balanced by a seamless line of cool climate acid structure, providing length and drive. The complex flavours linger thanks to a long, fine, finish.

Seared salmon, orange and pistachio
4th Course
Pinot Noir 2023, Our Price $40
Estate fruit, machine harvested and handpicked. 10 months on medium lees of which 25% was new oak and 15% whole bunch. Much like Champagne maisons hold their NV wine high and mighty, Castle Rock’s estate Pinot Noir sets the benchmark for quality. You’ll find preserved strawberries, wild hibiscus, dark cherries and notes of savoury wagyu bresaola. Torn rosemary, pine needle and bay leaf. Sweet blackberry wine gums and licorice root. Sappy tannins and a thread of straight shooting acidity. There is a chew to the red berried fruit and a nice crunch of pomegranate seed on the finish. A well rounded wine.

Diletti Pinot Noir 2023, Our Price $48
This is a completely engaging example of Porongurup pinot noir in the hands of a master winemaker. After the fruit was handpicked it underwent carbonic maceration with cold soaking. The old foot stomping technique was used before 10 months in oak. Seductive aromas of strawberry and darker plum with a savoury edge. The silky-smooth palate delivers a combination of power and drive presented with elegance and poise.

A&W Pinot Noir 2023, Our Price $52
The source of this exceptional wine are the oldest vines on the estate, planted by Angelo and Wendy Diletti in 1986. It is as good as any Pinot yet made from this super vineyard. Seamless structure and silky smooth with a velvety mouthfeel. The aromas of strawberry and plum merge with a slightly spicy earthy mushroom-like nuance. Effortlessly long with structure and poise. A marvellous statement of a great vineyard created by the deft hands of Rob Diletti.
